Send a message(+30) 2610 221354A peppery edible herb from the mustard family, best known as a nutritious vegetable. Dried watercress retains a mildly pungent character and is used mainly in cooking and in aromatic blends.
Glucosinolates, flavonoids, vitamin C and carotenoids characterise the plant, although levels change with drying. It stands out for its peppery nutritional value and antioxidant phytochemical profile.
Watercress is valued mainly in cooking, in salads, soups, sauces and savoury dishes. Its peppery flavour and glucosinolate compounds make it an interesting addition to a varied diet.
Traditional literature links it with convalescence, poor appetite and anaemia, with cough, bronchitis and digestive discomfort, and with arthritis, rheumatic complaints and skin concerns such as eczema, acne and rashes. Modern research focuses mainly on its nutritional, antioxidant and phytochemical value.
Add a small amount to soups, broths, sauces, spreads or seasoning blends. Its peppery flavour pairs well with lemon, garlic and olive oil.
For an aromatic drink, use about 1 g in 200 ml of hot water for 5–10 minutes. The dried herb gives a mildly peppery infusion suitable for occasional culinary use.
The quantities are indicative and based on traditional use and published herbal-medicine literature. For prolonged use or when taking medication, consult a healthcare professional.
In cooking it combines with parsley, nettle or spinach. In aromatic drinks it may be paired with thyme or lemon.
Avoid large or prolonged intake in stomach ulcer, serious kidney disease or thyroid disorders without advice. People taking warfarin need consistent vitamin-K intake and professional guidance. Correct identification and hygienic processing are important because the fresh plant grows in water.
It is Nasturtium officinale, an edible member of the mustard family with a characteristic peppery flavour.
Mainly in soups, broths, sauces and savoury blends for a peppery taste.
Drying changes some sensitive constituents while retaining part of the aromatic and phytochemical profile.
