Ground & Whole Spices

Whole mace blades

Mace is not a flower but the delicate aril that surrounds fresh nutmeg. It offers a brighter, more refined aroma for sauces where the seed itself might feel too heavy.

Aroma & flavour

Warm and sweet, with nutmeg, pepper, cinnamon and citrus notes. It is more delicate and slightly more floral than the seed.

How to use it in the kitchen

Crush a small piece in a mortar, or simmer a whole blade in sauce and remove it. Its thin structure releases flavour faster than whole nutmeg.

Where it works best

It suits white sauces, fish, seafood, vegetables, potatoes, compotes and delicate desserts. Pair with white pepper, bay and clove.

What it contains

It is the dried aril of Myristica fragrans, not the tree’s flower. It surrounds the seed known as nutmeg.

Mace is the red aril that wraps the nutmeg seed: same tree, different spice. The nutmeg tree originates from Banda in the Moluccas.

Mace is milder and more refined than nutmeg, and the blades are usually crushed rather than grated.

Useful details

  • Form: whole brittle blades.
  • Origin: Indonesia, Sri Lanka, India and Latin America.
  • Intensity: delicate but distinct.
  • Use: Handle the blades gently and keep broken pieces, as they have the same aroma and are easy to use in a mortar.
  • Storage: Keep tightly sealed in a cool, dry and dark place, away from heat, moisture and rising steam.
