One thing sets it apart from industrial vinegars: it is not pasteurised. Heat treatment stabilises a vinegar but strips out whatever the fermentation left alive.
- Enzymes and pectin — retained, because there was neither pasteurisation nor filtration
- Trace elements, minerals and vitamins from the cider, as the natural process leaves them
- No added sulphites
- The acetic acid of fermentation is the component research has looked at in relation to blood sugar, weight and metabolism
Research findings are preliminary and do not replace medical advice.
Taste & texture
Round and fruity for a vinegar — the Pelion apple shows in the finish. Less sharp than filtered commercial vinegars, cloudy, with sediment settling at the bottom.
What it contains
Ingredients: cider vinegar from organic farming. A Greek organic product.
Nutrition per 100 g:
- Energy 84 kJ / 20 kcal
- Fat 0 g — of which saturates 0 g
- Carbohydrate 2 g — of which sugars 1 g
- Protein 0 g — Fibre 0 g
- Salt 0.01 g
Where it fits
On boiled greens and vegetables, where lemon falls short. In lentils and pulses, at the end of cooking. In salads with hard cheeses. Diluted in water, as a daily habit.
Ideas for use
One tablespoon in a glass of water, always diluted. Shake before use.
Keep cool and dark, away from direct light. Because it is unpasteurised, the mother may keep growing in the bottle over time — this is not spoilage.
Useful to know
- Unpasteurised and unfiltered — sediment, cloudiness and a growing mother are expected
- No added sulphites — an option for those avoiding them
- Always dilute. With reflux or ulcers, speak to your doctor first
- Greek product from Mount Pelion, 500 ml bottle
